Popover And Maine

No matter what season of the year it is, one place where we love to be is Acadia National park,Maine.It's one of those places where you just can't help falling in love with nature, people, beaches, lighthouses, carriage roads, stables and lakes.It is one of the most beautiful and enchanting places on the Earth.

In our first or second trip to Acadia, we went to the Jordan pond house restaurant for lunch. The dining tradition of  Jordan pond house dates back to 1800 where they served afternoon tea to Summer time visitors and aristocrats. While sitting on the outside lawn on a lovely and gorgeous Summer day facing Jordon pond and views of Penobscot Mountain, we were served bread resembling big muffins. We had no idea what it was !!  Our server told us they are called "Popovers" and  they are served during breakfast or tea time.The Popovers were light,hallow and buttery in taste.We enjoyed them with a generous slather of Maine's wild Blueberry jam.

After our trip, I tried to recreate the famous Jordan pond house style Popover at home.They turned out alright but there was something missing.May be it was the unparalleled scenic view of Penobscot Mountain and the Jordon pond.


Popovers                                           
Adapted from : The Williams -Sonoma Baking book.

Yields : 8 medium sized popovers.

Dry Ingredients
All Purpose flour - 1cup
Salt- 1/2 tsp.
Chopped fresh herbs/dried herbs of your choice- 1 tbsp ( 1 tsp if using dried herbs)
Cranberries- 1/3 cup
Wet Ingredients
Room temperature large Eggs- 2
Whole Milk- 1cup ( I used Skimmed milk)
Melted Butter- 2 tbsp
Honey- 1 tsp

  •  Preheat the oven to 450 F.
  • Whisk together the eggs, milk and honey.Beat it well.Set it aside.
  •  Combine all the dry ingredients in a medium sized pan except the Cranberries.
  • Gently mix the egg and milk mixture to the dry ingredients.Slowly stir enough to incorporate well. Don't over beat the batter,else the Popover will turn out hard. Stir in the cranberries.
  • Put the muffin pan in the oven for 10 minutes and then take them out ,immediately brush them with the melted butter.
  • Pour the batter into the muffin pan and bake them for 15 minutes.
  • Then turn the oven to 375 F and bake them for 5-10 minutes ,checking them occasionally.They will puff up and will have a nice brown top.
  • Let them cool in the pan for 5 minutes and serve them for Breakfast or as Tea time snack.Or just simply eat them hot out of the pan,like I did.
